After it rains, my loft stinks of ammonia. Dry days it’s fine.
Obviously moisture is activating something. How do I fix this?

Water is getting in somewhere and hitting the droppings/bedding. That releases ammonia.
Check:
Fix the water source first. Then improve ventilation so moisture can escape. Ammonia buildup is bad for respiratory health.
Quick temporary fix: agricultural lime sprinkled on floor absorbs moisture and neutralizes ammonia.
But really you need to find and stop the water ingress. The lime just masks the underlying problem.
